Can you use this for one person?
Yes! The seats are separate strike ups and moveable. They remain in place with strips of Velcro sewn into the floor. There is a solitary paddler setup where the seat Velcro's in about mid boat as well as the pole holders are appropriate behind for trolling.
Can anyone who has used this boat several times over a period of months verify durability?
I think the longevity is doubtful. I bought 2, one of them had a leak on the 3rd usage. All the seats started loosing air at the weld seams within 4-6 usages on the other one. Had one seat replaced that also dripped after the 2nd usage. 150 as well as 195 pound kayakers, I do not assume this need to be occurring, and also I believe it speaks with the level of longevity on this product.

Will two people and a 80+ lb chocolate lab fit?
You should be fine. I generally go out with another individual and also gear. Conveniently over the advised 400 pound ability.
will this fit into any dry bags backpack that is made for wearing long distance, and also leave room for pump oars and extra hiking gear(e.g 50L)?
Not even close takes up a lot more space than that.
might be silly but, I've never fished in a Kayak, how easy can hooks snag this material and cause leaks?
Anything can happen when a sharp hook is in the location but from my experience it would take a lot of pressure to punch a hook through the kayaks material. I do not fret regarding it!
Good for salt water intercostal waterway?
Yes. It was excellent on a lake with real tiny waves/calm water- you should be great to go as long as do not head out to open seawater where there are actual waves. It's strong, yet I wouldn't claim it's inflexible sufficient for sea waves.
